Exchange server licensing is pretty costly. You may opt for free linux mail server for backup. If fund is not an issue you can go with it. We can have a discussiion on this if you want

I can point primary and secondary MX records at my existing server cluster they act as anti-spam / anti-virus servers while also active as store and forward. so if your existing servers go down the email will be held until they are available or another server is in place. We currently run this solution for several thousand email's per hour and 30+ domains. Full configuration takes less than a day and can start immediately

This is easily accomplished in DNS and on your local firewall. That being said, you might consider Postini or a similar cloud based spam filter, which would accomplish this and be more reliable.
