Custom Android Touch Panel ROM / OS

Hi, I run a company based in the UK called and we specialise in audio visual control systems in corporate environments. We currently import and use touch panels that have an android 7.1 operating system the manufacturer supply, but I really would like a custom ROM on them so they are more branded as to what we require. I have the android img file from the manufacturer I could provide if this is helpful and possibly be edited as opposed to building from scratch. Also I can supply a touch panel for any testing location depending. What I am looking for ideally is the following... Replace android boot logo for Custom Logo Stripped back, light version of Android OS. Only including required applications. Possibility to use swipes gestures or similar to access “hidden” android menu/settings and/or apps. Boot directly into android kiosk app as this is what we currently use [login to view URL] The application already does this if set to the main launcher. Bootable image file that can be uploaded to different tablets easily via usb stick or adb or similar. This is so I can change the ROM on the imported devices simply.
