I have read your requirements. How many sensors are you connecting for data logging. My approach to this project will be as follows; Phase 1: implement data logging using sdi 12 sensors with arduino board. This will good for proof of concept. If you already done this then this can skip. Phase 2: referencing arduino code implement it ATtiny85 standalone board. For better project understanding, discussion is needed.
