Write file log with protocol and host of a visit in nginx

I have a nginx running as proxy in Linux centOS. (without php and none web backend language) I want check in a log the complete request of the visits including protocol and host. I mean I need see if visits are using https or http and which domain used to connect. At this moment the access log is just saving request URI and not protocol nor host. Please tell me if you can help me to configure to save in a log all request of the visitors for example: [login to view URL] the server have installed certbot for https requests. Very thanks !
