Looking for a Paralegal Specialist in Contract Law for Postponed Wedding

My fiance and I initially planned for a 200-250 guest wedding. Our original date was Friday, June 5, 2020. We postponed to Friday, June 11, 2021. At the time of postponement, both our reception venue, Chateau le Jardin, and their in-house DJ, DJ Emporium, increased their price. Chateau Le Jardin increased the price by 10%, explaining it was their annual business model. After questioning and challenging the 10% increase, they agreed to reduce the increase by 7%. DJ Emporium charged an additional $375 for “increased labor cost”. We were asked to sign new contracts, with very little time to review. Thus far, we have paid $10,000.00 CAD (cheque) to Chateau le Jardin, and $900.00 CAD (cash) to DJ Emporium. With so much uncertainty surrounding our new wedding date, we feel it is unreasonable for us to keep postponing or to continue paying with no concrete guarantee that we will be able to have our wedding nor receive the full services we contracted for, in the foreseeable future. DJ Emporium is now demanding payment of 50% of the new total and we are waiting to hear back from Chateau le Jardin. The hope is to receive our deposits back and be free from the contract. We were wondering what our realistic options are. We are will to negotiate but do not want to forfeit our entire deposit.
