Hi, I recently worked on a very similar project. I developed firmware for custom board with ESP32-WROVER-B for the cash register for the Czech Financial Government. All messages transmitted between ESP32 module and cash register CPU (eg. SPI, I2C, and others) were encrypted with different AES keys.
