Creation of a Flash based iPhone App "Book" for pro pilots

Winglet Media creates cutting edge, award-winning software for the airline industry. We want to create an iPhone App using Flash/Air which replicates a book that the pilots have on the aircraft for dealing with emergency scenarios. This App should pull in the information for each page from online XML files which will also include the information for formatting the text (this may be bullet-points, tables, font size, underlining etc) The final App should start with a menu showing all the available pages, plus the ability to "swipe" between pages. Attached is a screenshot of a typical page of the QRH. There are around 40 pages required to be made.
