I do Matlab projects on a regular basis including university assignments and research paper validations, algorithm implementations etc. It's been four years since and I am eager to help you out here. I went through the pdf and downloaded the recommended software as well. It seems after reading the pdf that there is no use of Matlab in this project, but just the SU2 software.
