Add remaining content from old site to new Joomla site + +

We have converted a semi-large html site into Joomla 1.7, but want to check that everything is "travelling" with us. The job: 1. Check the entire old site for remaining items and get whatever left into the new site. (That is ALL content: video, forms, links, text, images, etc.) It would be great if you have a safe way/tool for checking this. 2. Restructure new site categories according to new site map provided. 3. All forms must be implemented nicely and must be functional from new site. (Setting up again with i.e. RSFormPro) 4. Installation of plugins, components if necessary 5. Some formatting and "cleaning up": links, text, etc. 5. Be available after job done for small fixes/changes which might be needed. You will be provided login for db and admin for both sites. Please tell how you will approach the job and check the old site to be sure that everything comes in place.
