Woocommerce custom stock status for every product and hide shipping methods from different suppliers

Hey we have 2 task that have to be completed on Woocommerce webshop.
1) We have different suppliers and we have some products that are on stock in suppliers and some of them are not in stock, but they are on rest order. Currently woocommerce has only 3 stock status option, on stock, not on stock and rest order.
We want to add custom stock status for every product we have. ( we got the information on csv file for status)
For example if its not on stock has to give information to the customer that this item is not in stock but for exp. expected delivery date is 01.01.2021. The CSV files we got from suppliers they have the deliverey date information there, it has to be just connected with products.
2) As i wrote on 1 task we have different suppliers and these suppliers has different shipping modules and prices. We want to sort and hide shipping methods on different suppliers. Is this possible ?
I have added a custom field on woocommerce and every product is connected and marked from which supplier is. We have just make a method that if its from X suplier show those shipping methods and if its from Y supplier show other available methods.
