Hello, I am a senior Magento 2 developer, the task looks completely possible. We can work with a Magento cronjob executing once a minute, look for new files and process Magento catalog/stock. If you prefer it can also go to a queue such as RabbitMQ and Magento can process the queue. I will be glad If we work on this task together, it looks diferent but is possible.
