Automatisation bar restaurant club

There are many programs to help manage a bar restaurant, but none of them is really good. Many have a few limitations that can be lifted ONLY by the expensive visit of a tech (for example some software cannot restore a database from a backup without a technician!!)

So I need a software that will match MY needs:

Setup: Management will register the menu (beer X, beer Y, etc with their prices), that can be sorted in categories (food, drinks) and sub categories (cold, hot food, alcohol, soft drinks, beer etc) This is done on an usual computer.

Each food and drink is registered with its components. For example a Tequila-Sunrise cocktails contains 20 gr tekila, 20 orange juice, one piece of orange.

Each of these components is registered separately in the database, with their purchase cost, so that the management can know immediately the cost of the cocktail, when he enters the components and weights.

Every purchase is registered: We buy 20 liters of tequila at $20 a liter.

If next purchase of tequila will be 10 liters at $22 a liter, the cocktails from the date of this purchase and after the previous tequila is finished, will cost more.

All the above is done on an usual computer.

Orders: Waitresses etc type the clients orders (touch screen), by their table number, from the menu entered previously by the management.

Orders are then dispatched to bar, kitchen, etc. Ticket is printed so that cookers, barmen etc can process the orders.

Every order is registered in the database and stock is immediately update. For example if we have 10 liters tequila and we sell 3 sunrise (60 cl for all), stock of tequila will become, immediately, 1000-60=940 cl

Software will register the resale price ($20 by tequila) so that every day we have the result of the day sorted by category (food, drinks, and each product inside each category).

This every day bUT ALSO at any time in real time.

Every day, management will MANUALLY OR AUTOMATICALLY CLOSE THE DAY, that will archive the result and begin a new day with zero cost and zero sale.

At any time we can check each table position (details of what has been ordered, amount). When the client asks the bill, we make a PRE-CHECK that is given to him. We may still add some orders to this table. When client pays, table is closed, payment mode (cash, bank) is registered.

At any time we must be able to see the amount already paid (and how it was paid), as the amount due by clients.

It must be possible to write some sales at no cost (loss of beer for example, food used for free meals for the staff, etc)

Well, other things but the main idea is here :)

All must work with a few authorization levels (staff, managers, accountant, director). All by magnetic card or USB token.

Multiple discount system must exist. Mmany categories of discounts, each category can offer various dscounts on sales, for example:

Card VIP: 20% on menu, 30% on alcohol, 25% on other.

There must be some categories where NO discount applies.

Some discounts are used by discount card (magnetic card), others by the manager simply by granting a discount to a client.

Director should be able to change ALL details (components, dishes, discount rates on what, etc) at any time.

Software must work on touch screens AND on usual monitors and computers (Windows) with mouse and keyboard.

More than one POS of course: a few staff stations, one cash point, a few printers, accountant station, director point.

All (ALL!) system messages must be changeable (language, content). Encoding must be UTF-8

This is a serious and evolutive project, the selected programmer will have a long time job with us. Software sources must be supplied with no limitation and will become our property. Payments will be done by steps, on a schedule we will agree together.
