Add email type handler to CF application

I want to use Raymond Camden's Soundings application to create some online surveys. I don't understand how the various handlers work for field types. I need someone to create an email handler that will check for a valid email address.
You must be familiar with Soundings and able to add a handler that fits in seamlessly with the application. I'm a coldfusion coder, but I don't have time at the moment to do this one task, and I would like to better understand how to do it, so part of the job is to explain it to me so be prepared to comment your code and spend a little time dialogging with me.
