Hi Katelee2, the Interaction is a part of the UX design, so many times the UX Designer would take both roles, or lead the first.

The Product Designer is a whole different thing, because a new product requires different things additional to the UX design, the confusion comes because the product may be an experience, as it is in Disney and Universal Parks, but it can also be a car, or a faucet, as has been my case in the past.

A UX Designer focus on the experience the user is going to have. A Product designer, has additional to that, to take care of the manufacturing process, the quality control guidelines, product manual, the testing phase, the packaging, the price, etc.
